Weekend Fun

This weekend started out with the big Olathe South vs. Olathe East boys basketball game. It was the big Friday night "to-do". It was a lot of fun! I even got my very own concession stand nachos! Yep, that's right. That is what I was most excited about!

Oh, by the way, OLATHE SOUTH WON! It was a really exciting game!
The final score was 45 -35!



Saturday was pretty awesome. Well, kind of. I spent 3 hours at the Olathe public library. Who knew that was such as hopping place on a Saturday. Really? I stood in line for 15 minutes to check out! Craziness!

That night we had a big engagement! Guess who was in town? Yep - Sir Elton John and Billy Joel. It was such an awesome show! Angie and Bryan had asked if we wanted to go back in September. The original show was scheduled for December 2nd. Then Sir Elton John got sick. Boo. So they rescheduled. Totally worth it! They did a few dueling piano songs and then each did their own show and ended it by the dueling pianos again. And PS did anyone know that Billy Joel is hilarious?

The appointment

Today was Josh's appointment at the Orthopedic doctor's. We were anxious to hear some good news. Instead, devestation. No surgery. No manipulation. No anything. He said that the clavicle was in 4 or 5 pieces. WHAT?? Yeah, 4 or 5 pieces. He said that to surgically fix this would be like taking small pebbles and trying to glue them back together. There would be a high possibility of a non-union with all of the pieces AND that no matter what, he'd have to have the plate removed after a certain amount of time. Anyway, he said that we are to keep doing what we're doing. Immobilization for 4 more weeks. At least. He has a follow up scheduled then to re-evaluate the need for surgical intervention. They will take an x-ray then to check progress and healing. Keep your fingers crossed. But until then, keep us in your prayers.

(In case you don't know how miserable this is for him, tie your non-dominant arm to your body. Leave it there for 4 weeks. You will need to figure out how to shower, dress, shave, put on socks, drive - and wear your seatbelt, and sleep. Not to mention that baseball season officially starts in 2 weeks...)

What a weekend...


This weekend, my parents came in to town for some family fun! My sister and her husband and their baby came. We decided on Friday to go to Snow Creek in Weston, MO for some skiing/boarding. It is pretty small, but the weather was perfect which makes a world of difference! Little Ledger came too, but he stayed in the lodge and we all took turns watching him.


This was my turn. It just so happens that during this photo, Josh is currently out on the terrain park. Most likely at this point, he is already huddled on the ground wincing in pain. Josh took a jump and landed it wrong. He must have been 15 feet in the air (okay, probably more like 6 feet)! Nevertheless, Josh got to ride in the tobaggan. We took him to the ER in Olathe and found out that he fractured his clavicle (collar bone) in 2 places. The major fracture is pretty bad. So bad, in fact, that we have a consultation with an orthopedic doctor this week to see what our options are... :(


He did get spoiled afterwards. We had lasagna that night, Mi Ranchito for lunch the next day, and crab legs for dinner on Saturday! Yep, you heard me right. Crab Legs. I am awesome! Okay, so maybe crab legs are pretty easy to make. So what. I still made them and had people over to help eat them! We had about 10 pounds of "clusters" and all but 2 clusters were eaten. It was delicious! And Josh even cracked his own legs! What a man!

S'mores Cupcakes = YUMMY!


So Jamie made a similar cupcake for Kelly's birthday and I have been obsessed ever since! This weekend, my parents and sisters family are coming to town. For Valentine's Day, I thought I'd bake up some yummy cupcakes to celebrate.

S'mores Cupcakes

Cupcakes
1/2 cup all-pupose flour
1 1/2 cups finesly crushed graham crackers (about 20 grahams)
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup sugar
2 eggs
1 teaspoon vanilla extract
3/4 cup milk
1 cup chocolate chips

Frosting
1 1/4 cups granulated sugar
4 egg whites
1-2 teaspoons vanilla extract

1. Preheat oven to 350
2. Mix flour, crushed graham crackers, baking powder, and salt together and set aside.
3. Cream butter and sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add vanilla. Alternately add flour mixture and milk and beat until batter is almost smooth. Fold in chocolate chips.
4. Spoon batter into cupcake papers filling cups about 2/3 full. Bake for 20-25 minutes or until tester inserted into the center comes out clean.
5. To make the frosting: combine egg whites and sugar in the top of a double boiler. Whisk constantly over medium-high heat until mixtures reaches 160 degrees, about 5 minutes. Pour egg white mixture into the bowl of a stand mixer with the whisk attachment. Beat on high for 6 minutes or until room temperature. Add vanilla extract, 1 teaspoon at a time until desired flavor. 6. Frost cooled cupcakes and sprinkle with grated milk chocolate or graham cracker crumbs.

Reno


Last week I went to Reno, NV (well, Sparks, NV, actually) for a work conference. They send a few people from each office from each region in the country to go. This adds up to about 3,500 people at this conference. They call it the Education Fair because all day long each and every day we sit through class from 8:00 am to 5:00 pm. Boo. Actually, Friday was 10:00 am to 6:30 pm. Even more boo! You may ask what we do in our "free" time? Nothing, if you are me. If you are the other 3, 499 people, you get smashed, smoke, and gamble in the casino on the main floor of our hotel. Gross.

On a brighter note, my family is coming in to town this weekend! I cannot wait! I am sure at that time I will have much more entertaining and happy things to blog about. Until then...
